The first question to ask yourself, OP, is your plan to just get to end-game and raid? If the answer is yes, then logging in and talking with the GMs of some raiding guilds, or checking their recruitment ads would help you decide. Class will be much more important if that is your number one priority in coming to the server. If you are just here to play around and aren't necessarily planning to raid, then play whatever moves you.
At least up through level 40 or so, every class is in demand, because people want to group and do stuff (unless you are looking to solo). I do know that some classes are in higher demand come later levels, but that is where the first question I asked comes in play. And a positive personality and showing teamwork/playing your class well will get you groups even later in levels; and you are more likely to be positive or play your class well on a class you are more excited about than one that you are playing just because you want a raid spot at max level.

I'll never end up raiding unless I am there to support/sub in. I like to group and level, farm and have fun. I play socially for the most part (but often weird hours. My wife may go away for a weekend I am 10 hours a day, and after that may only get in an hour for the week.). Static groups don't work for me because of that, sadly.
I basically play for fun and do my part to make the experience fun for others. It's a game, that should be free of drama, and full of laughs.
