The part we eat is the seed of the plant.

It's very good cooked in some chicken broth, with garlic, saffron and onions.

I also enjoy it with some currants or sultanas, onions and seasoned with ras el hanout. If you can't find currants or sultanas, raisins work. Dried cranberries work pretty well, too.
