This was literally all I did when I played EverQuest when I was 8. I'd get a character to level 12 and make a new one. When one server was full I switched to another. Was kind of ridiculous...
Do what makes you happy, though. If you really want a high level character just try to figure out which of them you think you could stick with the longest. There's no rush on this server to hit cap.
