It should be possible to speak with a KoS npc using sneak. They then turn around to face you and smash your face in if you don't hit hide quick enough.

Yep, did this many many times over the years. One finger hitting enter to send the dialogue to the NPC, the other hitting my Hide hotkey a split second later.
