I'm quite confident I would enjoy playing a 60 chanter on red. But when I already enjoy playing a 60 chanter on blue, it is going to take more than red being "enjoyable" for me to make a change... especially given the things I just mentioned.

Impossible to know until you do it. If you liked any of the pvp you had (you did mention you had pvp) it is there to be sought out and if you didn't really care for it, it just adds another dimension of threat to the game (which some people enjoy to).
I get bored to easily on blue. Red is more challenging, both because of lack of groups and need for fending off the twinks.
