So if I ask GM to remove my surname, will I be able to later add a new one? I would like to get rid of my surname, but I am not really sure about new one, just wanna keep the first name for some time before I decide.

I've done it before. only time I wasn't able to add one was after surname had been reported and a gm did the first name_ which is what blocks it. Anytime I have petitioned for a change I have been able to put something else on there at a later time. if not just petition for it
