Uthgard, a server similar to origins has a population that is highly based in euro timezone (roughly 80%) so a lot of the mass pvp is hard to find. I'm not sure what origins is like but its also based in Europe so its something to consider.

I played DAoC a lot back in the day and I can give you some insight on ez mode classes. First, pvp endgame in DAoC is based around a core 8 man group. Sometimes there are zergs but the majority of guilds run in strict 8 man groups. Each faction has a vastly diverse class selection and that will dictate a lot of class options. There are also stealther groups/zergs that usually never participate in 8 man runs but are effective at ganking solos/duos or other stealthy.

EZ mode classes in PVE are:

Albion: Necromancer (By far best soloer in game)
Midgard: Bonedancer (can have up to 4 pets at a time, some of which heal or do damage plus has access to a easy mode instant cast life-tap, will pull mobs and tank)
Hibernia: Tough choice here, animist is an amazing class but not ez mode because there's a lot of thought and management that goes into summoning pets and where to summon.

PVP I wont touch to much on because it really is determined by how you play. As I said before you can really go one of 4 styles in DAoC. You can solo roam, stealth zerg, realm zerg, or 8 man. All classes can pretty much be effective but in 8 man groups you are expected to play certain specialized classes.

Midgard: Shaman, Healer, Zerker, Warrior, Savage, Runemaster
Albion: Sorc, Cabalist, Armsman, Merc, Cleric
Hibernia: Bard, Druid, Blademaster, Eldritch, Enchanter, Hero

Probably missing a few, if I am I will edit as I just did a rough draft to give you an idea of what to expect. I would not suggest you play a Bard or Healer (Mid Class) as a first time char as they are highly advanced classes. Melee are not terribly hard to play in DAoC due to the stick command but positioning is very important in DAoC as well as reaction for triggering certain weapon attacks.

My recommendation is to try a Bonedancer for Midgard. While not as great at soloing as a Albion Necromancer, they are able to still be effective in PVP, just not 8 man groups.

One last thing, and a warning to all who plan to play the stealth classes (including archers/assassins) you will most likely never get a group in PVE and leveling will be slow, more so for assassins as archers can solo decently. Those include:
Albion: Infiltrator & Scout
Midgard: Hunter & Shadowblade
Hibernia: Ranger & Nightshade
