Fishing never went beyond 200. Even on live I'm still 200/200. I went through a couple months ago and looked to see how all of the old skill caps had changed.
Right now you don't have the means in game to raise most skills above 200, and won't until velious (tailoring, blacksmithing specifically). So it would be wise to just hover until then since realistically, nothing required 200+ in classic. (JC was modelled differently)
Currently, JC is the only tradeskill with a reason to go over 200. So patience is the word if you expect to keep your main your tradeskiller and want to go after velium leathers or some such.

I did a fair amount of tradeskilling in the live classic era.You didnt mention jewelcraft, which was always the most "complete" tradeskill, implementation wise in classic, I believe you can get all the way to 250 and the high end stuff has value to players. But expect to dump ALOT of plat into getting there, like thousands. maybe tens of.

Classic Jewelcraft was a completely different animal.

In classic the cap was 200, jewelcraft was the only tradeskill to go above 200 for a very long time, but it had humble beginnings and was originally designed not to go over 200. It originally scaled differently and had fewer possible gem combinations. Blue diamonds were only for quests and didn't combine, and most combinations made different things.
Here's a chart of the old combinations (bottom of page), trivials went 3 5 8 10 13 15 18 20, up to 200. 78 combines, two broken recipes, and a new trivial every 2.5 points, rounded up.
