Prime Rib only comes one way, so that would be explain why the server did not ask how well/rare u wanted it. I went to his restaurant in NYC a few years back; food was enjoyable. It's hard to not be disappointed when going to these types of restaurants though because of the huge deal he makes about making perfect food on his show, no matter what they serve you, its not going to be perfect. That being said however, it was quite good.
