1) There's no such short cut on this server. You'll have to make a hotkey to your Primary, Secondary and an empty inventory slot (where your BoH will always sit) and unequip Primary/switch secondary to your instrument.
2 and 2a) These both have to do with setting up your UI, which sadly I have no close other than to point you to the Technical Forums where there are several different UIs available.
