You don't have to have 250 skill to make a 250-trivial item. You can get lucky at lower levels of skill. Items like platinum ruby veil and platinum jacinth rings and stuff are well above 250 trivial, so people just have more of a chance of failing them. They just have to try more times to produce a given number of items. The inevitable failures raise the selling price further above the materials cost.
Also, another fact I think many aspiring tradeskillers don't know: trivial does not mean "95% success rate." The 95% success rate for a given combine is reached significantly higher than trivial level for that combine. So yeah, trivial doesn't mean "OK this is easy for you now." It only means "you can't skill up from this anymore."
