Are all giants a ‘he’?
 

Hill giants, sand giants, fire giants, ice giants, frost giants and storm giants all seem to have male model only. Is there any lore about them?

Well that's hard to say..
There is the turkish giant and the arab giant and then the nordic giant.

I think they humbly keep the wife at home and head out to kill players to feed their families.

edit: Fire giants, Ice giants are actually magical elemental...
The same applies to the cliff golem. It's a magical giant.

And well I think they're just trying to live life and do their families right. It's not easy being a giant in norrath.
