What is the best 2H in Velious and what is the best 1H + Shield setup?

Frostwrath or Dawncaller aren't better than Sledge?

Not imo, less dps, worst proc

1h: Essence Blade or Jeldorin?

Idk, I feel like damage output isn't as important as damage prevention/negation for Paladins, but that's a long-held bias and could be wrong. If going the damage route, others who have looted it also insisted on the Sledge of Smashing. Looking over the list, it does seem like the most solid all-around option for the slot.

Buckler of Insight has to be the best, unless The Qeynos Shield drops on here at some point, but even then. Shield of the Dawn and the Protector are about tied for second place.

id rather have a weapon i can fight anything with.

Any true Paladin will be using the burning sword epic until the server is shut down permanently. Best fashion in all of Norrath.
