Could AC all just be bro science like agi? Has anyone crunched numbers and done damage tests with varying levels of AC to demonstrate exactly how effective it is?

On live, yes. I have not bothered to do them here. We know how it works and we do know that it does work. There are definite lines where you hit diminishing returns but it still has value beyond that point.
