Is there any way to replace Quest Journal keyboard shortcut or simply remove it ?

You can edit all of your keybindings by pressing CTRL + O (or maybe ALT + O, I forget) to bring up the options window, and then going to the keys (or keybindings, or whatever it's called) tab and editing your keybindings there.
