Why do most monks use dual weild and not 2hb?
 

So, I'll be the first to admit, I'm a big fan of 2hb and idk why, I think I just love seeing the mobs health disappear in chunks.
But almost every monk I see, I see using dual weild. Am I gimping myself by not using dual weild? Are there benefits of 1 vs the other?

well, it is simple logic really.

With two hands you can fight two opponents. With one stick you can fight one.

Depends on situation but mostly due to level. Once you hit 50+ DW is usually a better option DPS wise. Typically gives a bit more threat generation as well if you're tanking a dungeon or something.

2HB is 100% the way to go when leveling though, it's just better DPS across the board.

More push for interrupting those cheals.
Looks cooler.

To me dual wield is more fun because the mobs screech in pain more often.

The epic fist + sos/som is more damage than the tranquil staff starting at 55+

2 NTOV fists are more damage than Abashis currently

Once the October 2001 patch hits this will all change and only players with FoN/Gharn's/BoF will keep using them

Weapons of equivalent difficulty to obtain favor duel wield currently. That will probably change with an upcoming patch.

This is a good rule of thumb, although T-staff still has benefits when soloing a few levels beyond 55. Besides the stun, there's also less ripostes, and in return you hit harder with your ripostes. At 60 epic fist (nothing in mainhand) + Stave of Shielding is about 3 - 7% more dps than T-staff.

The reason why 1 handers are better is because of because the current sub par dmg bonus on 2 handers.

What is your level tho, and what weapons are you looking at?

I think it depends on which weapons you're using. I mean, obviously Peacebringer is going to out-damage a Wu Stick/Knuckeduster combo.

But if you can get your hands on AC/SoS or dual SoS, I don't think any 2HB comes out ahead while leveling. I've got 2x SoS on my Monk twink and it blew away the damage of the Peacebringer. Just far too many low damage hits from the 2HB for it to be competitive.
