I would love a server that continues the game design as it was in Classic, putting an emphasis on crafting and exploration instead of level cap and stat inflation.

The problem is a majority of people would (likely) find it boring.

I'd play it since it's my favorite era by far, but I wouldn't expect it to maintain any sort of population

Get rid of red finally and make purple classic only. Velious completely ruins pvp for casters anyways.
