It's p simple bro, max MR and DEX while keeping weight down = profit.
Ears - No BD's in classic, best you can do is 5 MR earring off Nillipuss?
Head - Tranix Crown / Crown of Frog King
Face - Split Paw Mask / other 5 MR mask from CT
Neck - 9 MR neck / White Gold Necklace
Wrists - 7 MR bracers
Waist - best haste item you can get / Drakescale belt if you have cloak haste
Cloak - Cloak of Ice Bear / Hooded Black / Cloak of Flames (lolololo)
Chest - Advisor Robe (like a boss) / ROTLC / Planar
Legs - Drake-hide / planar
Arms - Azure Sleeves / planar
Gloves - any magical gloves till shiverback gloves
Feet - any magical shoes (i.e. DWBs, but they weigh a lot) till planar
Fingers - Diamond or Jacinth rings

Ring: Djarns
Face: Pearlescent Mask 5agi 10mr serpent sight worn
Dexterity: Dexterity affects how quickly you learn weapon skills, and how often weapons will do their special. Whilst this statistic is relevant to Monks, it is nowhere near as important as Strength or Agility, and there are many lightweight items in the game to improve it if you wish to at a later point. You should not put points into this skill at creation.
This attribute affects Armor Class, Reflex Saves, and Ranged Attacks\

LOL yeah you did, last night before post.
Xantille mostly nailed it. I'll clarify his ideas and throw in some of my own as well.
Earrings:
-MR: Earring of Magic Reflection (Nillipus quest random award): AC1 MR+5
-HP: Electrum Black Sapphire (jewelcraft): AC2 HP+35 Mana+25 (like a monk cares)
Face: Pearlescent Mask (Kedge): MR10 AC5 grants infravision
Neck: Also consider Collar of Undead Protection AC5 DR+7 PR+7 as a cheap handy item against disease shamans and necros.
Wrists: Symbols of Loyalty to Vox can be handy here as well. AC5 CR+7
Legs: Gatorscale Leggings (Ancient Croc) AC7 HP+15 Wis+who cares
Gloves: Either Treant Fists (quested) or Gem Encrusted Gauntlets (also quested). Gem Encrusted are far easier to get and are pretty much equal.
Feet: Use either Wolfhide slippers (maybe some CR on 'em) or else simple Wu's (tailored).
Shoulders: Wu's or a Sode of Empowerment if you can get one from Hate.
Fingers: Non-resist-wise, Platinum Fire Wedding Rings are very nice here.
Other stuff:
Do the Blixkin Entopop bug parts quest a few times. He awards a pair of bracers - one with FR+10, the other with PR+10. Both also have 10 charges of nice clicky effects. The PR one has Cure Poison, which kills tash and poison DoTs very nicely.
Cap Bind Wounds and keep it there. A bandage with skill 200 heals 50-some HP over 10 seconds.
Carry at least a few Crystalized Pumice stones.
Get a Golem Metal Wand as well. Pumice is worthless if a pet or PC is pounding you.
Stock up on shammy potions such as SoW and cure disease.
Grab at least a few potions that have mild DoTs. I forget what these are called, but they're sold by the same guys that sell pumice. This prevents you from getting mez-locked.
Rack up several tonics from the Sol A goblin drunkard. These are clickies that heal 150HP a pop.
Carry several invis potions as well. Dispelling a caster and invising can buy you some time if they aren't expecting it.

On live/classic:
DEX was useless for Monks unless you were using a t-staff. Apparently here it actually affects hit rate though (CLASSIC AS FUCK?)
Most Monks put all puts into STA.
protip: get the high HP items for slots that are weak on resists. Black Sapphire (these drop, right?) Earrings are 35hp. HBC is 45hp and better than cloak of the ice bear or cloak of shadows or any of that shit. ROTLC is must have.
I used to carry around SoW and Null Potions (+magic resist)
