I mean all-time favorite. Your preference. Any cooking method, any amount of time to cook. What is your go-to cut of beef?

For me it is the great skirt steak.

Short Loin - Tbone Steak
It's tried and true.


dry salt for an hour at room temp (get good meat)
rinse the excess salt
pat dry the steak
coat with melted butter, garlic/herbs optional.
Sear that fker on a hot grill to your liking, 1-2 mins on both sides for me.


I don't eat grizzle or fat off the steak. I cut that away, digusting imo.

See I've always been hesitant about the T-Bone because you have 2 entirely different cuts on each side of the bone

It's like getting two steaks in one! it's awesome I highly encourage you to give it a shot. Just cut off the bone as required.

Another option is porterhouse steak. visually a very similar cut. Just as good in my opinion *drool*

This or porterhouse. Leave a bit of the gristle, but no one wants a bite of solid fat.

I like 'em cut thick so I use a SteakChamp and they come out just the way I want 'em.

I actually prefer a nice swordfish steak over tuna, but I do like canned tuna in salads and stuff.

I am lucky enough to have a natural gas line in my backyard. I had to drill open the orifice a bit to get the grill to work with the line, but it's totally worth it. Do I have the flavor of charcoal? No. But I have on-demand heat whenever I want it without having to fuss around with tanks.

My favorite beef is tartare, which is tenderloin but I don't think that's what we're talking about here since the cut would be ground.

Reverse seared cowboy ribeye on a cast iron skillet then.

See, ya gets yerself a green papaya, peel and take out the seeds, then ya grate half of it onto a plate, put a flank stake on that and then grate the rest of the papaya on top and pat it so it's all in contact with the meat. let that sit for about 10 minutes, then ya put black pepper on the steak and fry it. when the meat is almost done put the schreaded papaya in the pan too and cover it with a lid. When the meat is done, take it out and fry the papaya then just eat that wonderful thing with the stir fried papaya. Oh my, ya can cut it with a ford handle. so good and tender. mmmmmm.

I too am a big fan of the t-bone, but I do eat most of my fat. The trick is to try to get a nice sear on that sweet beef bacon. I am also a big fan of a nice, bloody tri tip served on sour dough.
Anybody else a big fan of horse radish?

King salmon steak is the true alpha meal

I’m all about the ribeye for beef though, I like a pan seared myself but there’s no real wrong way to cook a ribeye unless you like your steak well done. Don’t understand those types.

I'm no steak expert, but my go-to at home is ribeye grilled medium rare over charcoal with just a little salt and pepper.

I throw a little dab of butter on top after I bring it in and cover it while it rests. I only salt the steak as it sits and warms before going on to the grill. The BEST steaks I've had were sous vide but that's a little fancy and cumbersome.

Aside from the obvious ribeye, I don't think many people are aware of how good beef short ribs can be.

It's literally the best cut you can use for a soup or stew, and the fact that it costs basically pennies only adds to its taste.

Interesting. I should ask my butcher for some of that the next time I go. I usually get chuck roast or chunks of what is advertised as "Beef stew," but those items aren't amazingly cheap even despite the fact that they are less desirable cuts.

A well cooked ribeye is hard to beat. Aside from that, I really enjoy a couple Brazilian cuts. Picanha is similar to a top sirloin, if you get a chance to go to a Fogo de Chao or other Brazilian steakhouse that's the best cut to get.

Another is cupim, I think it comes from a different type of cattle than we have in the US so it's not really available here. I think the cattle has a hump above it's neck and it's cut from there, it's pretty well marbled and fatty, and it's a pretty cheap cut of meat.

So I usually go with skirt steak but I got some flank steak from Trader Joe's the other day, they didn't have skirt steak. Anything I should do differently?
