I am not super familiar with enchanters on live but I seem to recall their pets all starting with a weapon and a shield. If you handed them a 1h weapon they would replace the weapon they were currently using and keep the shield. If you gave them a second weapon they would put that in their offhand. Currently on P1999 (only tested on the level 20 and 24 pets) if I give it a weapon it replaces the shield with it and begins dual wielding. Giving it a second weapon has no effect.
Please correct me if I am wrong as again my experience with enchanters is limited.

all you're doing is allowing the pet to double attack or dual wield if it's high enough level. 29 i believe to truly dual wield. So as long as it has 2 weapons, mission accomplished. The stats of the weapons don't matter at all, unless it's a weapon with a proc. IE, a stun whip from gnolls. With haste and one of these, should be all you'd need.

Now that you talk about enchanter pets. The other day a party mate was practicing divination on me casting ivu, and my pet died... are enchanter pets actually undead?

They're supposed to replace the second weapon, in this case a shield, when they are able to dual wield. I am not sure if they're capable of that at that level, yet.
As for the other responses:
Maegi: irrelevant.
nilart: No, when you go invis, hide, or IVU, your pet will die off.

They do dual wield that early with weaps.
