How do people get the platinum to buy items such as Fungi tunic? Is it just saving over a long time or having high end zones on farm?

Selling high end items they obtained in less than a day to people who have farmed plat for more than a month.
Farming plat or vendor food for days and days, even months.
Trade skill profits over time.
Offering services such as power leveling.
Porting or Rezing for plat.
Selling MQs or drop rights.
Flipping EC.
Having friends in high places.

Some of it is saving over time, but your plat-making gets huge improvements as you level. Certain camps that are profitable become available at later levels. Also xp-ing in higher level zones can get you fancier loots that you can then tunnelquest for ever shinier piles of plat. Hell, at 55+ you can go to seb and try win your own fungi, which you can then wear or sell to buy epics or whatever.
It'll take some time but in your 50s you'll start seeing the cash roll in. Remember, there have been people on the server for years farming the seafuries or hillgiants or sol a goblins or selling jboots mqs or entire epic mqs etc. there are tunnel animals that literally can't move under the weight of held plats. It'll be a while, but you'll eventually find yourself breaking 5k, 10k, 20k etc not having anything specific to buy in mind.

I'm a 47 Necro and I am making some money but it's crazy to see these items going for those amounts. I just sit there saying to myself I'll never have that.

The hardest part is just not buying anything. It all adds up. Don't buy upgrades if you're saving for a big ticket item. It takes discipline....

If you treat the game not as a game but make it your job, soon you will be able to afford big ticket items. The question then becomes: Is it worth it?

Get something to 60, anything...and camp it (if its an item still available).
Otherwise yeah, sell your soul to the tunnel.
Another thing to remember is that a lot of player have been playing here for a very long time. It's not fair to compare someone who's been playing for 3 month to someone who's been playing for 3 years.
With casual playing and slow saving over long period of time you will still able to save up for big ticket items and by that time they will be cheaper too. However if you want to take short cut and get them asap, I think people already listed them, and they are not pretty.
They way i got to 300k+ in a year/two with not much effort and just playing the game
First I farmed seafuries for about 2 months straight avg. 1k per hour 2k if lucky
Second, I got lucky with xalgoz and got staff of dreaded gaze sold 50k
Third, Got lucky again in seb won a RBG sold 65k
Fourth, a friend quit who had a trak tooth in bank, sold that mq for roughly 100k
Fifth, Got super most luckiest moment ever when Emperor in crypt dropped Torpor and rolled a 100!!!!!!! sold 100k
Sixth, ...profit

It makes a lot more sense once you spend time in Sebilis. Even if you don't get anything big, you'll still pile up gems and tunnel scraps which all slowly add up, and sooner or later you're bound to win something nice - perhaps even a fungi tunic. There are still tons of desirable 5-10kish items that drop pretty frequently too.
Or yeah you can find some undercamped spot and play the RNG slot machine - Grachnist, Droga stuff, Xalgoz, Frontier Mountains named cycles, Hunter/Forager cycles, etc.
Or Seafuries, if you don't value your soul/sanity.

I've been just trying to focus on leveling and getting money along the way. I've tried holding down a camp but I never get drops.

There's nothing worse than reaching a point where your gear is insufficient for the things you want to kill.
If your only path to upgrade effectively is the EC tunnel, your two options for gameplay are:
1. Stop adventuring and EC Tunnelquest for plat and get your upgrade so you can move on to what you want to kill.
2. Begrudgingly level in zones with mobs you can kill with your current gear, so you can make some progress and gain money. This may require research to find zones/spawns/camps that are often overlooked by traditional players. For example: The Najena zoneline in Lavastorm is a great place for someone to solo from LV16-22. Coin and loot sell well, and if you happen to be friendly with Neriak, you can sell faster than in EC (the bricks off dervishes get heavy).
