I have three grills, propane, wood burning(thats also a smoker), and charcoal.
I mostly use the propane because its so convenient, but the wood burning is my favorite for flavor and the charcoal is nice for when someone comes over that likes it, but I never take it out of the garage.

unless you are using a sear burner on a fancy propane grill, you will find that you can get a much better sear on a nice charcoal grill

Hank hill is right about propane, and you CAN actually get a smokey taste with a propane grill without it tasting like charcoal, sprinkle some water on the meat before you flip it and put the lid on. Works every time and soooo delicious with lamb chops and garlic oil marinade

I would recommend a decent quaulity off set smoker, replace the stat with a high quality thermostat and install a gasket kit for better temperature regulation. Season it with some good pecan wood and go to work.
Or.... Use a ghetto grill with newspaper in a section 8 apartment for total "thug life" immersion.

i grill with charcoal 2 times a week atleast on saterday and sunday, its def a hassle takes 45 mins to setup. but if you are going to put on some good steaks, don't ruin em with propane /shrug.

Charcoal adds a degree of flavor to chicken and fish but when you're grilling a good high end steak you want to alter its flavor as little as possible. Gas does this. It allows you to bring out the flavor of the meat with just a light salt and peppering and keep it clean. Charcoal is great for bbq with sauces. Chicken. Tritip. Stuff like that. Things you want to really alter the flavor of.

You are wasting your time. Gas is more precise with the heat and you only need it on the grill for about 8 minutes. The charcoal is adding nothing.

grilling is an amazing activity and all, but if youre making good steaks you should heat a cast iron skillet to 500 degrees in your oven, turn the oven off and put the skillet on your gas range on high, throw the steaks in there with a small amount of butter to sear each side, then place the skillet back in the now-off-but-hot oven for a few minutes, pull and rest. top notch shit right there.

I like to cook thin slice chuck steaks well done over newspaper plus various twigs I find around my pad and then slather them with a1. Wash it down with some md 20/20.
