I went on the live servers to talk to people (FV). I just... only 3 people were willing to talk to me. I started in SoL and learned EQ from there. Is this server/people willing to spend more time with me as a player, do I get more interaction. Yes I'm used to farming emp crushbone for a ringmail (think that was what is was) but I want to make sure there's someone I can at least talk to... So uhm... anyone out there that wants to just blab and level and shit?

Look for lowbie/newbie friendly guilds.
But yes it can be hard to find groups that are more interested in chatting and socializing instead of just grinding out XP as fast as possible. But we're out there.
I tend to find excuses to leave groups that don't at least spend a little time chatting between pulls.
I am lucky. My guildies and I have been playing MMO's together since 2004. We've played EQ EQ2 DDO WOW LOTRO but always seem to come back to EQ. We all use Ventrilo so we can chat without typing.
We all have a lot of characters under 20 so we can go out and solo a lot while keeping our mains all close to the same level. If you see anyone wearing the GHOSTS of TNFC guild tag, hail them, tell 'em Rawlden said to say HI and ask them what the guild tag means. That will get you some good conversation.
There are only 6 of us, but i think between us we have well over 50 characters on the server.

On Blue low by zones should be bustlin' ^^ and last I checked there were a handful of newby/leveling guilds. Kittens Who Say Meow comes to mind. Someone still on blue May be able to hop in with other suggestions ^^
On red, join TD for leveling goodness. The population overall is lower, but TD has a significant population of new and leveling players making it easier to get going and find pals to group with ^^ /OOC can be... Unusual at times, but it's server wide and guild chat more than compensates for any shortage of engaging conversation outside ^^
Good luck and hope you find some peeps to chat with ^^ shouldn't be a problem on either server, both are newby friendly.

People are very friendly to new players on this server. Go to a newb zone and group with people and you'll find some who fit your style. Gfay/crushbone are full of people and safe for you to travel

Yep, just like what others are saying. There are lots of low level chars and people in lowbee zones like GFay/Crushbone area sometimes give items away to help noobs out. nothing that will ruin your experience, but it's good stuff.
Joining a guild helps too. Kittens and there are a few other.

the server is very active across all level ranges. Join up, you will not regret it

Gfay/Crushbone is definitely a good spot for new new players. Maybe East Commons Orc 1/West Commons Cutthroats/Befallen. And don't forget you'll have tons of leveling/grouping time all the way to 60. I found this server waaaay more social than live.
Getting in a guild as others say is the best way to get social and network. You can also try setting up a "static xp group" wherein everyone follows a typical timeline of when they login and group up. It opens up more opportunity in traveling the not oft beaten path.

This is probably the best mmo server running right now for making friends.

Far as live goes, starting on FV gave you no chance. If you started during Luclin (SoL) and had trouble meeting people then, it won't be better here. Server population is roughly the same and no new race to convince people to roll out alt #41, though there are still newbies.
That said, the amount of player interaction you experience is dependent on you. You have to be willing to put yourself out there. You have to contribute. Simply, no one wants to carry dead weight. You don't have to out dps everyone or rip agro off the tank, just show you're doing what you can and you'll earn some peoples respect.
Some people get off work and just want to kill stuff w/o mindless small talk. Others will tell you their life story. If all you do is sit there waiting for a random group invite, you'll never meet anyone. If you're unwilling to travel, don't expect much either. There's no pok or translocators, so you'll have to pay for ports or take the boat. It's a big world and you people of all levels are spread across it. Just bc you started in one location doesn't mean it's the best or most populated place for you to be.
Anyway, good luck.

From experience on red, it depends on the time of day. I play a lot in the morning and there aren't many people on then.

We're still pretty social here, which is one of the things I like about it. Many people have access to nicer gear and don't necessarily need to group up much at the lower levels but some will do so to be sociable if the company is good. I find I get the best results with people either asking or answering questions and sometimes more follows. Alternatively, threads for groups that meet at fixed times and level together are fairly popular and that's a good way to connect even if the group itself doesn't go the distance to the end game. There's also guilds, although I haven't had much luck with them myself, as much due to my inclination as any problems with them.
