Just get an electronic meat thermometer, they're cheap as well. Sear your steak in a pan, get it all nice and caramelized and then tuck it in an oven and heat it slowly to the right temperature. Perfect medium rare steak every time.

A trick learned while working in the restaurant business.
Sear one side of the steak. Give it good grill marks. Don't overdo it.
Flip it over. This is he magic side. Use the juices that come up as an indicator of how the meat is cooking. Here are the stages the steak will go through indicating it's readiness.
Cooked for a little time, no blood has come through the seared layer yet = rare.
Blood starts to seep through - medium rare.
Blood has come through for a bit now - medium.
Blood is slowing down - medium well.
Blood stops - well done.
The only time it's failed was when I second guessed it.

Yeah I use the pressure method. I do it with tongs (never forks, don't pierce that meat!) and can get a pretty accurate indication just by how springy or tough it is.

True enough. I never found it really accurate though and was difficult when you had 15 cuts of meat on the grill all in differing stages on done ness.
Ymmv though.

I always organize my grill into regions of meat temps for high volume. Find the hottest to coolest parts of the grill and put well > rare in those areas. The hand method for checking is stupid IMO. Not everyone has the same hand etc.....only true way is to use that thermometer.
More importantly, let your meat rest and account for carry over cooking. Especially on big cuts. It will continue to cook and rise 5 deg. or more from the temp you took when you pulled it out.
Oh yeah, Toilety Goodness.

You can heat up a cast iron pan in the oven on broil, then put it on stove top with burner going, add olive oil... 2 min on each side 2 min on broil in oven. perfect medium rare every time. lots of smoke though. and meat cant be thin sliced
