When utilizing a Guise of the Deceiver (Pre-Nerf) to go from, lets say an Ogre to a Dark Elf, does one gain the Dark Elf's racial Hide ability?

As with all illusions, you gain the passive abilities, but not the active ones.
So, as an ogre using a guise i lose my ability to slam, but i retain frontal stun immunity and gain ultravision.

Not entirely correct. I don't become frontal stun immune when my dark elf chanter uses Illusion: Ogre. I don't get full troll/iksar regen when using those illusions. I don't get +5 MR when using erudite illusion. Etc.

And when velious goes live, my gnome will gain ability to slam with the barbarian mask

Not to rain on anyone's parade, but Illusion: Barbarian doesn't get added to the AoW mask until 10 months into Velious.
